This estate grown blanc de blancs comes from our three great sparkling vineyard locations, Whitlands Plateau, Strathbogie Ranges and the Yarra Valley. The beautiful vineyard resources we have at high altitudes, the finesse and elegance of pure Chardonnay cuvées, and the complexity drawn from méthode traditionnelle are all on show in this exclusive release.

Pale straw with green hues, very fine bubbles and persistent mousse. Quince, subtle praline, lemon myrtle, seaspray, green pear. A subtle cinnamon spice element derived from oak barrels. Citrus and quince flavours on the palate, with delightful acidity and tension, soft texture with very fine bubbles.
WINEMAKING
WINE MAKING
Chardonnay grapes from our estate vineyards were picked between late February and mid-March. Several parcels of each block (and clone) were pressed and fermented separately to ensure the unique characteristics of each batch and diversity of fruit were retained. A very small proportion was fermented in small, seasoned oak barrels to give us further complexity. Each cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon vintage style. Following tirage and secondary fermentation, Chandon Vintage Blanc de Blancs 2016 spent more than 42 months ageing on yeast, an essential part of the méthode traditionnelle process.

Good winter and early spring rains provided perfect conditions for strong shoot and leaf growth. Warm spring conditions led to an early budburst followed by early flowering. Clear and dry summer weather prevailed, with some brief rain in January, just enough to slow the ripening and carry the soil moisture through to harvest. Warm days through February, without extreme heat events, ensured full ripening of mature grapes.
VINEYARD
As one of the coldest vineyards sites in Australia, the Whitlands Plateau benefits from high altitude and cool air drainage from the plateau itself. The lofty exposure is complemented by red basalt ferrosol which are special soils that frequently produce wines of great personality and enduring age-ability. Our Strathbogie Vineyard sits at just over 600m elevation and has striking granite geological features, producing Chardonnay grapes with profound flavour and minerality. Our warmer Yarra Valley vineyards add stone fruit characters and softness.
