Chardonnay, Pinot Noir and Meunier grapes from the Green Point vineyard were picked in mid-February, slightly earlier than picking for table wine. This ensured the bright, natural acidity balanced the delightful fruit characters in the final sparkling wine. Several parcels of each varietal were pressed and fermented separately to ensure the unique characteristics of each batch were retained. Each cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon sparkling. Following tirage and secondary fermentation, Chandon Vintage Yarra Valley Cuvée 2016 spent over 30 months ageing on yeast, an essential part of the méthode traditionnelle process. This length of tirage ageing was chosen specifically to retain vibrant, generous fruit flavours alongside subtle biscuit characters and pleasantly creamy texture typical for Chandon sparkling.

Wine Profile
TASTING NOTES
Pale straw in colour with small, fine bubbles. Complex fruit aromas of green apple, lemon curd and ripe peach. Fresh, bright. Subtle biscuit and fresh-baked frangipane tart characters derive from extended time on yeast lees. In the mouth, the wine is generous and rich. Balanced between fruit flavours and zesty acidity, the wine shows a creamy texture and great persistent flavours.
VINEYARD
As one of the original sparkling vineyards sites in Australia, the Green Point vineyard benefits from gentle slopes and grey sandy loam soils. Well established vines planted 30 years ago are trained vertically to ensure the right amount of fruit exposure.
WINE MAKING
Good winter and early spring rains provided perfect conditions for strong shoot and leaf growth. Warm spring conditions led to an early budburst followed by early flowering. Clear and dry summer weather prevailed, with some brief rain in January, just enough to slow the ripening and carry the soil moisture through to harvest. Warm days through February, without extreme heat events, ensured full ripening of mature grapes.
