If there’s not already a Chardonnay grape somewhere on Australia’s coat of arms, it’s about time we put one there. Chardonnay makes up a quarter of the total grape harvest in Australia, and the incredible diversity of vineyards – including our very own Yarra Valley, Strathbogie Ranges and Whitlands Plateau – is a gift for sparkling wine lovers. Alongside its bright, softly acidic flavours of Fuji apples, pears, nectarines and Meyer lemons, comes an aroma of fresh lime blossom and fennel. This release of Chandon Blanc de Blancs was the perfect opportunity to show off a truly Australian style of Chardonnay using the traditional method, and it’s one that’s going straight to the pool room.
WINEMAKING
WINE MAKING
Chardonnay grapes are harvested from early February to late March. On arrival, the grapes are pressed to juice, which is clarified by flotation prior to inoculation with cultured yeast. The primary fermentation occurs in stainless steel tanks with a few, small selected parcels fermented in oak vessels for greater complexity. In May, the winemaking team assemble the Chandon Blanc de Blancs NV base from this selection of new base wines and reserve wines from previous years. The aim is to produce a blend with consistent style, complexity and character. Stylistically, the aim is to produce a consistent wine from year to year, by using varied vineyard sources and reserve wines. The aim is to produce a more Australian style of Chardonnay Blanc de Blancs, with soft, delicate palate weight and friendly, generous flavours, making this wine very easy to drink and enjoy. Following the secondary fermentation in the bottle the wine is aged on the yeast lees, which contribute a range of complex, savoury aromas and flavours to the finished wine. Perhaps more importantly, the yeast contributes to the texture and overall finesse of the bubbles, a result which cannot be achieved without this méthode traditionnelle. Individual bottles are then riddled and disgorged, and a small amount of dosage liqueur is added to finish the wine. After a further three months’ bottle age the wine is ready for consumption.

We encourage you to pair as you wish but if you are really stuck, try scallops with cauliflower puree, a whole baked snapper with Asian herb salad and for dessert, lemon tart is always a nice match for Chandon Blanc de Blancs.

Chardonnay is widely planted in Australia, and represents around a quarter of our total grape harvest. As a consequence, we have an enormous variety of locations, and with each location comes a new set of flavours. The diversity of Chardonnay expression in Australia is a great benefit for Australian sparkling wine producers and consumers, something to be proud of and to celebrate. This first release of Chandon Blanc de Blancs non-vintage was an exciting opportunity to show off a truly Australian style of Chardonnay blended as Blanc de Blancs and made using the traditional method.
