This limited release, Cellar Door Blanc de Noirs is 100 percent Pinot Noir from our winery estate in the
Yarra Valley. This wine is a reflection of Chandon’s French heritage and innovative winemaking technique of
methode traditionelle crafted wine of complexity, character and finesse.

Wine Profile
Upon opening the wine presents with a pale straw colour, very fine bead and persistent mousse. Delicious aromas of plum, yellow peach and vanilla are prominent on the nose, with a sweet pastry note, typical of Pinot Noir fruit expression. The palate displays fine bubbles with a creamy texture, ripe yellow stone fruits with soft, lingering acidity. The length of flavour draws from Pinot Noir fruit expression and generosity.
The Chandon vineyard in the Yarra Valley was planted in 1987 with Chardonnay, Pinot Noir and a small amount of Meunier. The cool climate of the Yarra Valley permits long, slow ripening of the grapes and the sandy clay soils which are typical of the Yarra Valley floor, retain moisture even in the dryer seasons ensuring healthy vine growth. Vines are pruned to the classic double Guyot, arched cane system and trained to a vertical shoot position to permit sunlight and air flow between the vines and canopies. An extremely low yield in 2014 resulted in grapes full of character and ripe fruit flavours.
A season full of promise with good soil moisture and excellent bud burst soon turned challenging with the untimely arrival of cold, wet and windy conditions in September during flowering. This resulted in fewer bunches setting and a reduced crop for many growers. Good weather favoured the remaining crop from October to December. January arrived with warm summer conditions and although a few hot days challenged the grapes, good soil moisture and a strong, vibrant canopy permitted steady ripening under improved conditions. What had been a challenging season for quantity turned into great optimism for exceptional quality. Cool nights and bright sunny days allowed for the development of flavour and maturity. Beautiful fruit with intensity, freshness and abundant natural acidity was the result. Harvest began in mid-February in the Yarra Valley and exclusive use of fruit from our Coldstream vineyard permitted the selection of an outstanding parcel of Pinot Noir. The Pinot Noir grapes from different clones and blocks were pressed and fermented separately to ensure the unique characteristics of each parcel were retained. Following tirage and secondary fermentation, Chandon Cellar Door Blanc de Noirs 2014 spent over 36 months ageing on yeast, an essential part of the méthode traditionnelle process.
