This terroir specific wine draws from what we consider to be two of the Yarra Valley’s great sparkling vineyard sites. The beautiful vineyard resources we have in two locations in the Upper Yarra have delivered the finesse and elegance of Pinot Noir and Meunier cuvées, and the complexity drawn from méthode traditionnelle are all on show in this exclusive release.

Wine Profile
TASTING NOTES
On opening the wine presents with a pale straw colour, very fine bead and persistent mousse. Classic Pinot Noir characters blood plum, quince paste and ripe fig overlaying biscuit, shortcrust pastry and nutmeg spice. On the palate the wine presents dry with fig and plum characters persisting. Acidity draws out the long palate with a sense of minerality and seaspray.
VINEYARD
These two Upper Yarra Valley locations are among the coldest vineyard sites in the Yarra Valley, a consequence of both altitude and cool influence from southerly weather patterns. The Pinot Noir vineyard is planted in granitic soils, which are unusual in the Yarra Valley and unique to this southern location. The Meunier grows in deep red volcanic soils, adding further nuance and complexity to the blend.
WINE MAKING
Pinot Noir and Meunier grapes from our two Upper Yarra vineyards were picked mid-March. Several parcels of each block (and clone) were pressed and fermented separately to ensure the unique characteristics of each batch and diversity of fruit were retained. Each cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon Vintage style. Following tirage and secondary fermentation, Chandon Blanc de Noirs 2015 spent over 42 months ageing on yeast, an essential part of the méthode traditionnelle process.
Food Pairing Notes
Cantonese roast duck; crispy roast pork with roasted root vegetables; hard cheeses like gruyere.
Other Notes
Mild conditions in late winter and a favourable start to spring resulted in an early budburst for Whitlands Chardonnay. Late spring and early summer provided ideal conditions leading into veraison. Summer remained mild, with few days in excess of 35°C. This, combined with good canopy cover and cool nights, resulted in one of the best vintages since 2002 for early varieties, such as Pinot Noir and Chardonnay. Abundant flavour with some of the best acid balance we have seen shows amazing promise for the complexity and longevity of the 2015 wines.
