Blanc de Blancs can only be made from white grapes, and is known for its elegance and finesse, our 2017 Vintage well and truly delivers on that promise. Hailing from our Whitlands vineyard where elevation captures purity of fruit, 2017 was a cooler year which had our winemakers rejoicing. The result, a sparkling which dances and energy despite considerable age.

TASTING NOTES
The nose is vibrant with lemon zest, grapefruit, apple blossom and charming minerality. On the palate, it is crisp and lively, with flavours of citrus and layers of hazlenut crumble and biscuit, sure to further develop in the coming months and years.
WINEMAKING
WINE MAKING
Chardonnay grapes from our estate vineyards were picked between late February and mid-March. Several parcels of each block (and clone) were pressed and fermented separately to ensure the unique characteristics of each batch and diversity of fruit were retained. A very small proportion was fermented in small, seasoned oak barrels to give us further complexity. Each cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon vintage style. Following tirage and secondary fermentation, Chandon Vintage Blanc de Blancs 2016 spent more than 42 months ageing on yeast, an essential part of the méthode traditionnelle process.
