Wine Profile
TASTING NOTES
Straw colour with very fine bubbles and persistent mousse. Aromas of baked quince and ripe pears, with dried apricot and honey aromas in the background. The palate is fine, with quince, pear and almond nougat supported by fine texture and delicate acidity. A well-integrated and balanced wine.
VINEYARD
Grapes were sourced from a range of the finest cool climate viticultural sites in the southern wine regions of Australia, including the Yarra Valley, Tasmania, Whitlands Plateau and Macedon. At a range of altitudes from 250m to 820m elevation respectively, the location of these vineyards brings cool nights, allowing the slow development of Chardonnay and Pinot Noir flavours while retaining terrific natural acidity.
WINE MAKING
Grapes were picked at the onset of fruit ripeness during early February through to early March at 10.0° - 11.6° baumé. The grapes were picked in the cooler parts of the day to preserve quality and ensure minimal colour was extracted during the cuvée pressing. The grapes from each site were pressed and fermented separately to preserve their unique characteristics. Chardonnay and Pinot Noir cuvées from the Yarra Valley, Tasmania and Whitlands Plateau were sourced for this special long ageing wine. Chandon Winemaker’s Selection Chardonnay Pinot Noir 2009 spent over nine years ageing on yeast.
Food Pairing Notes
Salmon rillettes; Pork belly with apple slaw; Nougat ice-cream
Other Notes
While a challenging season marked by devastating bushfires, Chandon’s multi-regional fruit sourcing approach ensured consistent quality across the 2009 release wines. Having had perfect conditions for fruit set during December and early January, unusually warm conditions in early February encouraged rapid ripening across the Yarra Valley and Victoria. Chandon was fortunate to have picked its Yarra Valley floor fruit before the fires struck and to have access to a selection of high altitude fruit in the Upper Yarra Valley and King Valley.
