This special terroir specific wine draws from vineyards in the Yarra Valley, the home of Chandon Australia. The beautiful vineyard resources we have deliver the character and essence of pure Chardonnay cuvées, while the complexity drawn from méthode traditionnelle is on show in this exclusive release.

Wine Profile
TASTING NOTES
On opening the wine presents with a pale straw colour, very fine bead and persistent mousse. Aromas include lemon pith and orange blossom fruits, complemented by sea spray, “summer rain in stones” minerality and brioche notes from extended ageing on yeast. Palate complexity with citrus fruits, hazelnut and brioche characters from the yeast ageing is balanced against the orchard fruits of green apple and grapefruit, while fresh acidity carries the long, persistent finish.
VINEYARD
The slightly warmer location, the Yarra Valley floor delivers Chardonnay fruit expression of great character, with stone fruit and orchard fruit expression. Clay loam soils provide the balanced vigour in the vineyard, producing fruit with optimal sugar and acidity.
WINE MAKING
Chardonnay grapes from our Yarra Valley vineyards were picked mid-February. Each parcel or block of each vineyard (and clone) were pressed and fermented separately to ensure the unique characteristics of each batch were retained. The cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon Vintage style. Following tirage and secondary fermentation, Chandon Yarra Valley Blanc de Blancs 2014 spent over 42 months ageing on yeast, an essential part of the méthode traditionnelle process.
Food Pairing Notes
Foie gras and toasted brioche; Scallops ceviche; Salt and pepper squid
Other Notes
A season full of promise with good soil moisture and excellent bud burst soon turned challenging with the untimely arrival of cold, wet and windy conditions in September during flowering. This resulted in fewer bunches setting and a reduced crop for many growers. Good weather favoured the remaining crop from October to December. January arrived with warm summer conditions and a few hot days to challenge the grapes but overall good soil moisture and a strong, vibrant canopy permitted steady ripening under fantastic conditions. What had been a challenging season for quantity turned to great optimism for exceptional quality. Cool nights and bright sunny days allowed for the development of flavour and maturity. Beautiful fruit with intensity, freshness and abundant natural acidity was the result.
