SKU: Chandon Yarra Valley Cuvee 2014

Our rare and locally focussed méthode traditionnelle sparkling wine, Chandon Yarra Valley Cuvée 2014 is blended from the classic grape varieties – Chardonnay and Pinot Noir – growing in the Yarra Valley right here on our doorstep.

Wine Profile
White nectarine, mirabelle plum, fresh flowers, cherry patisserie, elderflower. Some subtle macadamia nut characters. Palate shows stone fruit and lemon curd characters, some florals and fine acidity balanced by a creamy texture coming from long yeast ageing.
The fruit for the 2014 Chandon Yarra Valley Cuvée was sourced from premium Yarra Valley vineyards, with Chardonnay leading the blend, being a strong performer in 2014 in the Yarra. The vineyards are trained to the standard vertical shoot positioning trellis to minimise the development of colour and tannins whilst maintaining excellent ripening and vibrancy of flavour.
Grapes were picked at the onset of fruit ripeness at around 10° baumé. The grapes were picked in the cooler parts of the day to preserve quality and ensure minimal colour was extracted during the cuvée pressing. The grapes from each parcel were pressed and fermented separately to preserve their unique characteristics. The wine was disgorged and dosed after extended yeast ageing and was then rested before its release, providing additional complexity to the aroma, flavour and texture of the wine.
Food Pairing Notes
Pork and ginger stir fry; Livarot (soft white mould goat cheese); Chicken with tarragon
Other Notes
A season full of promise with good soil moisture and excellent bud burst soon turned challenging with the untimely arrival of cold, wet and windy conditions in September during flowering. This resulted in fewer bunches setting and a reduced crop for many growers. Good weather favoured the remaining crop from October to December. January arrived with warm summer conditions and a few hot days to challenge the grapes but overall good soil moisture and a strong, vibrant canopy permitted steady ripening under fantastic conditions. What had been a challenging season for quantity turned to great optimism for exceptional quality. Cool nights and bright sunny days allowed for the development of flavour and maturity. Beautiful fruit with intensity, freshness and abundant natural acidity was the result.
