In 2013 we took the decision to source Shiraz from the Yarra Valley. The Yarra Valley has a great diversity of mature sites which can produce finer styles of cool climate Shiraz with soft, silky tannins and juicy berry fruit flavours, alongside spice and floral elements. Domaine Chandon Shiraz 2014 displays delicious varietal aromas and a complex palate. Aromatically intriguing, full of charm and medium bodied in structure, the 2014 vintage showcases the complex flavours of Shiraz from cool climate Victoria.

Wine Profile
Dense purple, bright with excellent depth and clarity. Juicy bramble fruits, blackberry compote, violet flowers and delicate baking spice. Dark cherry and blackberry fruit flavours are complemented by silky tannins. Great persistence and completely integrated oak flavours mark the finish of this modern style Yarra Valley Shiraz wine.
The vineyards, planted on soil types identified as being ideal for producing varietal Shiraz, contribute unique character and complexity to the final wine. Shiraz grapes are drawn from vineyards with north facing slopes in the warmer lower elevations of the Yarra Valley. Vineyards were meticulously maintained during the growing season to achieve dappled light throughout the canopy, ensuring the development of tannins and pristine varietal flavours.
Grapes were harvested when they were displaying optimum flavours of blueberry and pepper. Each parcel was assessed and a combination of maceration methods used to optimise aromatic and structural elements in the final wine, including whole bunch inclusion in the musts and cold prefermentation. Warm fermentation temperatures were managed in small open fermenters with daily plunging to extract colour, flavour and tannins from the fruit. Complete malolactic fermentation took place in fine French oak barrels followed by twelve months ageing. Following this, the wine was clarified, blended and bottled.

A season full of promise with good soil moisture and excellent bud burst soon turned challenging with the untimely arrival of cold, wet and windy conditions in September during flowering. This resulted in fewer bunches setting and a reduced crop for many growers. Good weather favoured the remaining crop from October to December. January arrived with warm summer conditions and a few hot days to challenge the grapes but good soil moisture and a strong, vibrant canopy permitted steady ripening under fantastic conditions. What had been a challenging season for quantity had now turned to great optimism for exceptional quality. Cool nights and bright sunny days allowed for the development of flavour and maturity, resulting in beautiful fruit with intensity, freshness and abundant natural acidity.
