It's simple to prepare and guarantees a touch of sophistication to any occasion.
CHANDON PINK GRAPEFRUIT SPRITZER
Ingredients:
Chandon Blanc de Blancs (or your favourite Chandon sparkling wine), well chilled
Grapefruit syrup :
390ml pink grapefruit juice (freshly squeezed is ideal)
60g fresh raspberries (or strawberries)
195g caster sugar
Pith and zest of one pink grapefruit
Garnish:
Fresh pink grapefruit slices
Ice
Rose petals
Method:
1. In a small saucepan, combine 390ml pink grapefruit juice, 60g fresh raspberries, 195g caster sugar, and ½ pith and zest of a fresh grapefruit. Simmer gently over medium heat for 5-7 minutes, stirring until the sugar dissolves and the berries break down slightly.
2. Remove from heat and let the syrup cool completely. Strain through a fine-mesh sieve to remove solids, if desired, for a smoother texture. Syrup can be stored in the fridge for several weeks.
3. To serve, pour 30ml of the cooled grapefruit syrup into a wine glass. Top with approximately 100ml of chilled Chandon Blanc de Blancs (or your favourite Chandon sparkling wine). Add 3-4 ice cubes and garnish with a slice of fresh pink grapefruit and rose petals.
