Chandon Vintage Blanc de Noirs 2019
Blanc de Noirs, which translates to 'white from black,' is a white sparkling wine predominantly made from black grapes. In this case, a special parcel of Meunier. By separating the juice from the skins early in the process, we achieve a beautiful clear color while retaining the red fruit flavors, a hint of violet, and a savory edge.
TASTING NOTES
TASTING NOTES
A beautiful lifted violet note on the nose and a rich, full-bodied flavor, with notes of red fruit, nuts, and toasted bread. There’s a depth and generosity that make it perfect for food pairing.
WINEMAKING
WINE MAKING
1. Harvest early February to late March. Grapes are pressed to juice. 2. The juice is inoculated with cultured yeast. Primary fermentation occurs in stainless steel tanks with a few select parcels fermented in oak vessels for greater complexity. 3. The second fermentation occurs in the bottle and the ageing process beings. 4. The wine then spends 2.5 years on yeast lees. 5. Individual bottles are then riddled and disgorged. A small amount of dosage liqueur is added. After 3 months bottle age the wine is ready!
