95 POINTS - AUSTRALIAN SPARKLING WINE SHOW 2023 - HUON HOOKE
“Light yellow colour; steely, lemon juice aromas, the palate delicate, refined and restrained, tense and dry, with a lingering lemony aftertaste. The palate is tight, fine and very dry, the invigorating acidity drawing out the long finish. An appetising wine that cries out for oysters.”
94 POINTS - HALLIDAY WINE COMPANION 2024 - PHILIP RICH
“A very light, bright green gold. The majority of the fruit comes from Chandon's high-altitude Whitlands vineyard and it shows in this subtle, finely structured wine. Citrus and gentle brioche notes lead onto the palate, which is dry, chalky textured and racy. That this will continue to evolve and blossom is a bonus.”
TASTING NOTES
TASTING NOTES
On the palate, lime and green apple notes make a reappearance, while hazelnut praline, biscuit and fresh dough give it a bit of extra body.
WINEMAKING
WINE MAKING
1. Harvest early February to late March. Grapes are pressed to juice. 2. The juice is inoculated with cultured yeast. Primary fermentation occurs in stainless steel tanks with a few select parcels fermented in oak vessels for greater complexity. 3. In May, assemblage occurs which involves blending a combination of new base wines with reserve wines from previous years. 4. The second fermentation occurs in the bottle and the ageing process beings. The wine will spend a minimum of 2 years on yeast lees. 5. Individual bottles are then riddled and disgorged. A small amount of dosage liqueur is added. After 3 months bottle age the wine is ready!
FOOD PAIRING
Food Pairing Notes
Chandon Vintage Brut is best served a little more on the casual side: in a wine glass instead of a flute, and with fresh fish and chips by the seaside with your mates.
OTHER NOTES
Other Notes
Nothing quite gives you kudos like walking into a party with a magnum in hand, especially when it’s CHANDON - 1.5 liters of bubbles tends to set the vibe.
