In 2013 we took the decision to source Shiraz from the Yarra Valley. The Yarra Valley has a great diversity of mature sites which can produce finer styles of cool climate Shiraz with soft, silky tannins and juicy berry fruit flavours, alongside spice and floral elements. Domaine Chandon Shiraz 2015 displays delicious varietal aromas and a complex palate. Aromatically intriguing, full of charm and medium-bodied in structure, the 2015 vintage showcases the complex flavours of Shiraz from cool climate Victoria.

Wine Profile
Dense, dark purple with some red hues. Dark plum, violets and blackcurrant aromas with subtle spices in the background. Juicy berry compote and purple floral notes overlay nutmeg and cinnamon spices, with hints of pepper. Fine grained tannins and a hint of French oak build complexity on the long finish.
The vineyards are planted on clay loam soil types with significant rock components. Coldstream is known for a long history of shallow rock quarries which have provided stone for local building and roadbase since 1878. Shiraz has a long and intimate history with rocky soils in the Rhone Valley, where the greatest vineyards have protruding rock and stone as the main geological feature. For this wine, Shiraz grapes are drawn from vineyards with north and west facing slopes in the warmer, lower elevations of the Yarra Valley. Vineyards were meticulously maintained during the growing season to achieve dappled light throughout the canopy, ensuring the development of tannins and pristine varietal flavours.
Grapes were harvested when they were displaying optimum flavours of blueberry and pepper. Each parcel was assessed and a combination of maceration methods used to optimise aromatic and structural elements in the final wine, including whole bunch inclusion in the musts and cold prefermentation. Warm fermentation temperatures were managed in small open fermenters with daily plunging to extract colour, flavour and tannins from the fruit. Complete malolactic fermentation took place in fine French oak barrels followed by twelve months ageing. Following this, the wine was clarified, blended and bottled.

Other Notes
Mild conditions in late winter and a favourable start to spring resulted in an early budburst for varieties such as Shiraz and Pinot Noir. Late spring and early summer provided ideal conditions leading into veraison. Summer remained mild, with few days in excess of 35°C. This, combined with good canopy cover and cool nights, resulted in one of the best vintages for still wines since 2002. Abundant flavour with some of the best acid balance we have seen shows amazing promise for the complexity and longevity of the 2015 wines.
