This special terroir specific wine comes from what we consider to be one of Victoria’s great sparkling vineyard locations, Whitlands Plateau. The beautiful vineyard resources we have at high altitudes, the finesse and elegance of pure Chardonnay cuvées, and the complexity drawn from méthode traditionnelle are all on show in this exclusive release.

Wine Profile
On opening, the wine presents with a pale straw colour, very fine bead and persistent mousse. Citrus zest, grapefruit and green apple fruits overlay subtle white flowers with a slight suggestion of freshly baked biscuits. The palate presents a vibrant green apple and citrus freshness, with a creamy texture and fine acidity drawing the long palate. Delicate notes of toast and lemon curd on the finish indicate the bright future for those who can cellar this wine.
As one of the coldest vineyards sites in Australia, the Whitlands Plateau benefits from high altitude and cool air drainage from the plateau itself. The lofty exposure is complemented by red basalt ferrosol which are special soils that frequently produce wines of great personality and enduring age-ability.
Chardonnay grapes from our Whitlands vineyards were picked mid-March. Several parcels of each block (and clone) were pressed and fermented separately to ensure the unique characteristics of each batch and diversity of fruit were retained. A very small proportion was fermented in small, seasoned oak barrels to give us further complexity. Each cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon Vintage style. Following tirage and secondary fermentation, Chandon Whitlands Plateau Blanc de Blancs 2015 spent over 42 months ageing on yeast, an essential part of the méthode traditionnelle process.
Food Pairing Notes
Kingfish ceviche, seared scallops with lime butter or crab spaghettini all pair excellently with this wine.
Other Notes
Mild conditions in late winter and a favourable start to spring resulted in an early budburst for Whitlands Chardonnay. Late spring and early summer provided ideal conditions leading into veraison. Summer remained mild, with few days reaching over 35 degrees. This, combined with good canopy cover and cool nights, resulted in one of the best vintages since 2002 for early varieties, such as Pinot Noir and Chardonnay. Abundant flavour with some of the best acid balance we have seen shows amazing promise for the complexity and longevity of the 2015 wines.
