Étoile No.3 opens with aromas of mandarin and blood orange, with layers of violet and cumin seed. It’s evocative and intricate like walking through a market filled with fresh fruit, warm spice and pastry drifting in the air.
The palate builds with bright kumquat citrus with fennel, hazelnut nougat and spiced apple. The sensation builds like a
crescendo: flavours rise in layers to a vivid peak, then taper slowly into an echoing finish. It’s not just complex — it’s curious. A wine that makes you lean in.

WINE MAKING
For the third release of Étoile, our winemakers approached blending not as a process of selection, but as a true act of composition. Rather than beginning with a single standout vintage as the foundation, they started with a blank canvas — layering flavours and textures with intention and intuition. In blending, some combinations don’t simply add up; they transform.
Étoile No.3 sourced Pinot Noir, Chardonnay and Meunier from the Whitlands Plateau, Yarra Valley, Strathbogie Ranges, Tasmania and Macedon Ranges. The blend includes vintages from 2005, 2011, 2012, 2013, 2014, 2015, 2016, 2017, and 2018.
